This isn’t specifically a Diabetic recipe as such, but is certainly suitable for Diabetics. It is a recipe in the Thermomix cookbook “A Seafood Bounty”, which just happens to be one of the cookbook incentives when you purchase a Thermomix and hold a Demo this month.
200g uncooked Prawns, shelled and de-veined
Salt & Pepper to taste
1 tspn Cornflour (White Wings has a gluten free if you need it)
1/2 MC White wine
3 cloves Garlic
300g Broccoli, cut into florettes
Mix prawns in a bowl with a little salt, wine and Cornflour.
Place garlic into TM bowl and chop for 5 seconds on speed 6. Scrape down sides of bowl with the spatula.
Add oil and sauté at Veroma temperature for 2 mins on speed 1.
Add broccoli, salt, pepper, prawns with marinade and sauté at 100 degrees C for 8 mins on Reverse & speed 1 or until Broccoli is cooked to your liking.
